Weigh-In Wednesday

After avoiding the scale for a couple weeks, I finally sucked it up and weighed myself. I knew I was going to gain, and I did:

Last weigh-in Wednesday (January 30) I was 201.8. I started the year at 207.8, so it was a solid 6 pound loss. Then "blahness" set in, I stopped going to the gym, I hurt my toe, and I ate and drank more than I should on more than one occasion. I'm still down 3.8 pounds since January 1, so at least that's something, but I am disappointed that not only did I gain, but I wasted 2 weeks where I could have lost weight. Had I stayed on the wagon, I would almost certainly be in the 190's today.

That's a rough pill to swallow.

We are getting closer and closer to our cruise this June, and I want to drop a solid amount of weight by then. With 18 weeks to go, I think it's totally possible to lose a total of 35 pounds (that includes the 3.8 that I am already down)... so I am going to aim for that. With a 35 pound loss, I'd be 172.8.

To help visually motivate me (you know, because my flab hanging over my jeans isn't enough visual motivation), I created this weight loss tracker that I hung by my scale in the bathroom:

On the left are the number of pounds I still have to lose, on the right are the number of pounds that I have lost.

Of course, I still have my points and if I don't start exercising again soon, there is ZERO chance I'll be able to earn my final prize of new clothes for the cruise.

Hopefully my new tracker and my (increasingly-difficult-to-achieve) points goal will help motivate me :)

Blah

Lately I've been feeling very blah.

I tend to get a little blue in the winter so, given that this is the coldest winter I've experienced with snowstorm after snowstorm, it's no surprise that I feel this way.

Plus, after I broke (?) my toe on Super Bowl Sunday I have been super inactive. I know, I know - it's just a toe. Look, I have a very low tolerance for pain (won't pregnancy and birth be fun someday?!), and this thing is just not healing. It started feeling better a few days ago, but then Buster jumped on it and now I can't even do something simple like wear shoes without being in pain.

So much for exercising.

It's not like I'd go to the gym even if my toe felt fine. I have zero desire to actually DO anything. Work has been taking significantly more time the past couple of weeks because I can't focus, and I am having trouble getting out of bed in the morning. Last week I slept until 10 or later almost every day, and didn't get started on work until after lunch.

When I don't finish work until the late evening, the last thing I want to do is exercise, clean, cook - or anything else besides lay on the couch and watch TV. This just makes things worse, because I look around the house and become overwhelmed at all of the things I need to do. And then I look at the scale and see all my hard work in January being reversed.

I'm in SUCH A FUNK and I need to snap out of it. I'm sure the fact that I am in my house practically 24/7 is NOT helping. I'm sure that not really having friends in Philadelphia is NOT helping. But I don't feel "up to" fixing either one of those things.

It's a vicious cycle.

I'll be fine. "Blahness" isn't a new feeling for me. It's just been a long time since I felt this way. For the last few years I blamed it on work, but now I LOVE my job (seriously, I couldn't be any luckier. Sometimes I want to pinch myself because I cannot believe how perfectly everything aligned to get me to where I am). So, I guess I'll just now blame it on the damn snow and cabin fever.

On a happier note, Joe is doing amazing in dental school. I am SO proud of him. He just wrapped up anatomy (his toughest class ever) and physiology. While he will still have science classes, now he's also going to get to do more practical things in the lab. His loupes arrived ($1,400 for those babies!) and so did his dental tool kit. He was like a little kid at Christmas :)

Alright - I am off to bed and hope to awake with determination to shake my "blahness."

Disney Night Date

Being a rabid fan of anything Disney, I was SO excited when Joe pulled this week's date. We were to have a "Disney night," which meant watching a Disney movie and making Monte Cristo sandwiches.

Take it from me, Monte Cristo sandwiches are the BEST thing you can eat at Disneyland (find them at the Blue Bayou or cheaper at Cafe Orleans). Here is a picture from our recent trip:

Making our own Monte Cristos was surprisingly easy. We combined ideas from a few recipes online and listened to Disney music on Pandora while cooking :)

The result, of course, was not as good as Disneyland's, but we don't have a deep fryer and that is highly necessary for a true Monte Cristo. Nevertheless, it was yummy. Here's how we made ours:

------------------------------------
Kate & Joe's Monte Cristos (Makes 2 Sandwiches)
Adapted mostly from this recipe

INGREDIENTS:

  • 1 large egg
  • 1/3 cup whole milk
  • Kosher salt
  • Freshly ground black pepper
  • 4 slices of Texas toast
  • 4 ounces of thinly sliced ham
  • 4 ounces of thinly sliced roasted turkey breast
  • 4 ounces of gruyere cheese
  • 2 tablespoons of unsalted butter
  • Blackberry preserves (to preference)
  • Powdered sugar (for dusting)

INSTRUCTIONS:
  • Whisk the egg and milk together in a shallow dish and add salt and pepper to taste.
  • Place your bread on a work surface and spread blackberry preserves on each piece. We did a light layer on ours, but it could have been thicker. The amount is up to you :)
  • Divide the ham, turkey and cheese into piles on two slices of bread. Close the sandwich with the remaining 2 slices of bread and lightly press together to help the sandwich stay together.
  • Over medium heat, melt the butter in a large nonstick frying pan until it foams. Watch carefully to make sure it doesn't burn. Lower the heat to medium-low if necessary.
  • Once the butter is ready, grab a sandwich and dip each side of it into the egg and milk batter. Then place the sandwich in the frying pan. Repeat.
  •  Fry until the bottoms of the sandwich are golden brown (about 6-7 minutes, but watch carefully). Flip the sandwiches and repeat.
  • After making sure the cheese is melted and the sandwich is warm through, transfer to serving plates and top with a healthy dusting of powdered sugar. Serve more blackberry preserves on the side for dipping.

FINAL RESULT:

Ta da! This is what your Monte Cristo should look like:

------------------------------------

Once our sandwiches were ready, we turned on The Lion King.

I was always more of a Beauty and the Beast, Aladdin, and The Little Mermaid fan, so I haven't watched The Lion King in YEARS. It was so much fun watching as an adult and realizing all of the famous people who were in the movie. Since I am currently binge-watching The Borgias on Netflix, I was particularly excited to see that Jeremy Irons was Scar.

I always knew that Whoopi Goldberg, Nathan Lane, James Earl Jones and JTT were voices (oh, JTT - how little Katie loved you so...). What I didn't realize is the following:

Matthew Broderick was adult Simba!

Ernie Sabella (a.k.a. Mr. Carosi from the beach episodes of Saved by the Bell) was Pumba!

Rowan Atkinson (a.k.a. MR. FREAKIN' BEAN) was Zazu!

Cheech Marin (of Cheech & Chong fame) was one of the hyenas!

This was a seriously star-studded flick. And a fun fact I recently learned is that prior to Robin Williams being cast as the Genie in Aladdin, Disney didn't really cast famous people as its voice actors. Obviously that approach changed, which is readily apparent in The Lion King.

I have to admit, that there have been times when I didn't really get why people were so into The Lion King. It was a good movie, of course, but as I said I was always more of a Beauty and the Beast, The Little Mermaid, and Aladdin fan.

Watching The Lion King as an adult, though, I got a lot more out of it. There were some pretty heavy themes and I loved how it was clearly inspired by Hamlet:

It was also interesting because Mufasa's death took on a different meaning. As a kid, you are sad thinking about your father dying. As an adult, you think of how tragic it is to leave your child and your spouse fatherless / widowed. It really hit Joe (probably because we've been talking about babies a lot lately).

Despite the requisite sadness over Mufasa dying, this was a really fun and relaxing date night! I'm excited to see what our next date will be...

Our Cruise is Booked!

I am so excited to announce that Joe and I have (finally) booked our cruise for this June! We will be traveling from New Jersey (oh so convenient!) to beautiful Bermuda!

Okay. So if you are a weirdo like me, you probably read Bermuda and couldn't help but think of the Bermuda Triangle.

I found this when looking up pictures of Bermuda. That is absolutely terrifying.
This image may will haunt my dreams until June.

I have been petrified of the Bermuda Triangle since I was a child and went on some ride at Sea World that had a Bermuda Triangle theme. I swore I would never fly or boat anywhere near there. But, here I am: voluntarily boating to the actual island.

I must be growing up ;)

***Side Note*** Either that, or I liked the convenience of sailing out of New Jersey and the cheaper fare this specific cruise had compared to others. ***End of Side Note***

Joe and I have never been out of the country together (shoot! I need a new passport...) and he has never been on a cruise before, so this is going to be great :)

If you recall from the point system I started last month, I will reward myself if when I reach 3000 points, and that reward will be a shopping spree for clothes for the cruise. The cruise we booked is two weeks later than we initially expected, and I will certainly be needing every single one of those days to make up for some bad choices lately.

Ever since the last wave of snows started (almost 3 weeks ago), I haven't set foot in the gym. The thought of driving (let alone walking) in the weather we have had lately was seriously unappealing. Then there was the dental school formal where I ate and drank too much and the Super Bowl party where I ate and drank too much. I fully intended on getting back to the gym this week, but my broken toe from last Sunday has made that impossible.

***Side Note*** I have no idea if it actually broke, but it hurt like a mother and I couldn't do much more than hobble around for a week. It's feeling much better now, but it's still not 100% ***End of Side Note***

I plan to try Jillian Michael's 30 Day Shred tomorrow as a test with my toe. If I can make it through, then I'm going to try to do the Shred most days and run at the gym 3-4 days a week. Lofty goals, but I need to make up points and lose some weight.

I only have 132 days until the cruise, and that means I'll need to average 17 points a day to hit my goal. Since I want to have time to shop for the clothes, I probably need to average something more like 19 a day. It's definitely do-able; I've averaged 18 points a day since starting (and that includes 3 weeks of no exercise), but it really doesn't allow me to lose focus.

And I don't want to just earn these points through great oral hygiene and keeping the house clean (some of my non-exercise / non-food-related ways to earn points). While these things are important and the point system is designed to help me improve in lots of areas, I need to lose weight. I am currently obese (according to the stupid BMI chart which doesn't account for how incredibly dense I am). This is not a label I want. I certainly don't want it when Joe and I decide to start our family, since obesity can increase the chance of miscarriage and fertility issues.

Speaking of starting a family... I'm going to share a juicy tidbit ;)

Joe and I have picked a month. An official "pull the goalie" month.

Now, before you get too excited - this doesn't necessarily mean that this month is in 2014 (heck, the specific month could be January 2042). And it CERTAINLY won't be before the cruise since we are getting the unlimited booze package (pricey, but worth it haha).

There are lots of things we plan to do and a certain place Joe needs to be in school before that month. We also understand that we aren't in control of everything and situations can change (especially concerning distant plans). But for an obsessive planner like me, I feel so at peace with an actual timeline in my head.

And, no, we're not telling you what that timeline is.

Super Bowl Party

Ugh. Just typing "Super Bowl" as the title of this post has re-launched me into depression. As a Broncos fan, Sunday was brutal.

That poor, unsuspecting girl. She has no clue what is ahead. At least she has cute Paparazzi accessories ;)

But I figure it's about time to suck it up and write about the Super Bowl party that Joe and I hosted. After all, at least that brightened an otherwise gloomy day :)

While I couldn't decorate as elaborately as I like to for parties (way too busy), I did manage to set the tone for a day of football:

Lots of food and some homemade football decorations
A second TV which was 5 second ahead and would have been awesome during any nail-biting moments, of which there were none :(
And sugary (& faux-sugary) goodness
I planned to take pics before people got there and things got messy, but I broke my toe while preparing for the party.

That's right, after FIVE long hours of cleaning and cooking I was moving my desk and a heavy paperweight fell on my toe. It hurt more than you would expect (much, much more) and I couldn't really walk the rest of the day. So Joe took pics for me, and kept the food and drinks coming.

The sofa-side service was the highlight of my injury ;)

Heck - it was almost the highlight of the DAY. The game was seriously boring and depressing, and the commercials weren't much better.

But the food was good, the drinks kept coming, and the company was fun. I'm really glad we hosted, and want an excuse to host something again soon :)

Any excuses you all can think of? I'm thinking a season finale watch party for The Walking Dead... I've already started a Pinterest board for it ;)

Guest Blogger: Gabriel Ruiz (Dental Spouse)

Today I'm going to do something I've never done before: feature a guest blogger!

Gabriel is the husband of a dentist, and messaged me a few days ago about writing a post on life as a dental spouse. I thought it would be helpful for my readers who have husbands or wives in dental school :) What I love is how Gabriel and his wife are true partners in life and business.
-------------------------------------------------------------------------------------------------------------------

When I was growing up I never dreamed of being a doctor's “wife.” I expected to a be a teacher like my mother or preacher like my father. During dental school I even had an inkling of the inevitable. Still I didn't realize how much of a typical dentist's spouse I'd become until I introduced myself to a patient as "Gabriel, the doctor’s wife," on accident.

Today, nearly 14 years later, dentist's spouse is a label I wear with pride. My wife and I have been a team since dental school, and it has paid off. As a dental spouse I've been able to supplement those strengths that make her a great dentist such as determination, self-confidence, and attention to detail with my own strengths in communication, people management, and visionary development to create a thriving dental practice.

It is no surprise then that, after years of searching in vain for reliable dental practice management software that would be easy to use, affordable, and work on both PCs and Macs, we would choose to take the challenge of creating such a software together. Two years and a small fortune later, we are proud of the software we've created, Axex Dental. Check out a video of the software in action at video.axexdental.com.

In an interview with The Dental Geek blog about our experience and our software, we were asked if making the transition from dental practice to entrepreneur was difficult for us. The truth is that whether setting up a practice, taking over an existing one, or creating software, all dentists will be entrepreneurs at one point or another. Although we have been very successful in our practice and our software, it has not been without challenges, hard knocks, and harder lessons. But it does not have to be so painful.

Dental school will not prepare your spouses for running a business, and chances are they'll be too busy to supplement studies on their own. As a dentist's spouse you may want to brush up on business and entrepreneurship knowledge. You don't need an MBA. Listen to a podcast on startups every now and then. Read a book or two on business. I recommend "The Personal MBA..." by Josh Kaufman and "The Lean Startup" by Eric Ries. I really enjoyed those two, and believe me, what I find fun reading is typically "Good Girls Don't Bite Their Neighbors" by Molly Harper. . .

Huh. Maybe I am a typical doctor's wife after all.

Gabriel Ruiz has a BA in Theology from Southern Adventist University. He taught junior high at Loma Linda Academy, and until 2011, he was a stay-at-home parent of two wonderful children with an unpaid internship at Kimberly Riggs Ruiz DDS, Inc. in HR, IT, and BS (Marketing.) These days he splits his time between the aforementioned unpaid jobs and the equally unpaid job of Lead Evangelist and Co-Founder for Unident Software Company and Axex Dental.

Odontoblast 2014

Every year the dental school hosts a gala for its students, and last night was this year's event! The venue was incredible! Originally it was supposed to be at a hotel ballroom, but too many people wanted tickets so they moved it to the Penn Museum.

Which I am THRILLED they had to do.

Because instead of some nondescript (albeit fancy, I'm sure) ballroom in the middle of the city, we were at one of the coolest venues I could ever imagine.

As you can see, the lighting made iPhone photos rough. So I didn't take pictures of the venue, itself. Here are some photos off the web to give you an idea of the space:

Here is the main room - it was full of drink and food tables.

Part of the Egypt/mummy section was also used for the DJ, dancing & more bars and food tables.

The more cranberry vodkas I drank from the 3-hour open bar (!!), the more afraid I was that I would knock over a priceless artifact, but all was well :)

The food was also really fun. Amongst other things, they had soft pretzels and mini-cheesesteaks with cheese dip. O.M.G. so delicious.

***Fun Fact*** Most people know that Philly is big on cheesesteaks, but fewer people know that Philadelphians LOVE themselves a good pretzel. There's even a guy who works at Trader Joe's with a pretzel tattooed to his calf. Also, there are no less than FIVE Auntie Anne's pretzel stands at the nearby King of Prussia Mall ***End of Fun Fact***

Though I wore my most practical of dress shoes, my feet of course killed me most of the night. By the time we left I was hobbling to a cab. It didn't help that I am pretty sure I lightly sprained my ankle by slipping on some snow yesterday.

Despite my lingering foot pain, I will be on my feet a lot today preparing for our Superbowl party! I have always wanted to host a Superbowl party, and given that the Broncos are in it this year I knew I HAD to take the opportunity. Unfortunately, there's a really rough anatomy test scheduled for Wednesday. Since Odontoblast was last night, most people in Joe's class can't take time off today too. But we'll have a handful of people over, and more food than we'll know what to do with :)
